sidebar: Corinne and i started having periodic Gringo Nights a year or so ago. basically, one day we were taking about the Midwestern tacos we grew up on - hard Ortega shells, packaged seasoning, ground beef, lettuce(!), etc - when conversation quickly went from "ew" to "wow, that's actually starting to sound awesome". turns out it is indeed awesome albeit best saved for maybe 3 or 4 times a year, max.
